Our 2004 Special Reserve Cabernet
Sauvignon comes from the Chiles Valley appellation in Napa Valley.
The Chiles Valley
is nestled in the Vaca Mountains on the northeast side of Napa Valley.
The cooling fog and winds that moderate temperatures in other parts of Napa Valley
have difficulty reaching as far inland as Chiles Valley,
giving these grapes extended hang time and highly concentrated flavors.
The 2004 harvest occurred at the
beginning of October and yielded an extremely uniform harvest. The extended
hang time on the vine produced rich plum and blackberry notes. Aging for 17
months in small French oak barrels added lush vanilla and toast components.
This wine would pair exceptionally well with grilled lamb, roasted duck and
rich stews. To retain its character, only light filtration occurred and
therefore sediment might form as it ages. Cellar this wine for up to for 5-7
years.
